Special Making
Heating and Roasting
To bring out the distinctive flavor and fragrance of Iwai sesame oil, we heat and roast our sesame seeds using traditional techniques. Our experienced roasters use all five senses to assess everything from the condition of the seeds to the temperature and humidity of the air that day, fine-tuning the process to give the finished oil its one and only character.
Extraction
We extract oil from fine roasted sesame seeds using traditional pressing techniques, never using chemical solvents. Our equipment and facilities have evolved over the years, but our basic methods remain unchanged from 170 years ago, preserving the rich flavor and fragrance our oil is known for.
Filtration and Settling
After extraction, our oil is strained and transferred to tanks where it sits for two weeks, allowing the sediment to settle. Centrifuges might be more efficient, but allowing sediment to settle over time better preserves the flavor and fragrance. We then perform a final filtration process using cartridge filters that give our sesame oil a translucent amber finish.
